Sharpening- Push or Pull?
I have two of your Flexcut carving knives and think they are great. I know eventually they will began to get dull, so what stone do you recommend to sharpen them with? What is the correct way to sharpen--cut toward the stone, or drag the blade on the stone away from the sharpe edge?

First of all....Don't put them on a stone until the edge has become sufficiently rounded over from stropping it that it no longer has an efficient cutting angle as described on our sharpening page. Use a strop to maintain the edge as long as possible.
As for pushing or pulling, there are different opinions on this. My thoughts are that it doesn't matter. Getting the bevel flat and at the proper angle is the most important thing. And most of all getting both surfaces well polished with a strop and compound.
